When i sew a garments neckline I start with sewing the shoulder seam, leaving one open. Bind the neckline and then sew shoulder .

This is how I normally do. A dot with the glue-pen (link) and press the bindings end together Serge together (overlock) over the binding. The water-soluble glue-pen is often a life-saving tool
Fold the seam allowance, hiding the threads in between. Stitch by hand.

Blankets etc. without a natural beginning
Cut about 1 cm where you want to begin binding
Begin here, fold away the back and start slow
Go around the whole blanket
Here I use the glue-pen instead of needles
Fold the blanket and sew both the binding together. (the extra binding on the back is a trick to help the foot to be in level with the binding on the blanket.
Cut one on the binding, fold the other over and sew it down
I often hide the end under a label

An other alternative for blankets. Begin at a corner.
Bind around the whole blanket. Trim the beginning and go over, and continnue for a bit on only binding.
Cut at suitable length and fold the binding on the back. Stitch. Finished.
